Instructions
1.Whites of seven eggs, yolks of five, one and one-quarter cups granulated sugar, one cup flour, scant one-third teaspoon cream of tartar, a pinch of salt added to the whites of eggs before whipping; flavor to taste.2.Sift, measure and set aside flour and sugar; separate the eggs putting the whites in the mixing bowl and the yolks in a small bowl; beat yolks to a very stiff froth; whip whites to foam, add cream of tartar, and whip until very stiff; add sugar to the whites and beat in; then yolks and beat in, then flavor and beat in; then flour, and fold lightly through.
3.Put in a moderate oven at once; will bake in twenty to forty minutes.
